Lamb and Vegetable Skewers with Quinoa

Who knew something so healthy could taste so good? 

Serves 2

Ingredients
  • 225g lamb, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 zucchini, sliced
  • 1 capsicum, cut into chunks
  • 1 red onion, cut into chunks
  • Cooking spray
  • 1 cup cooked quinoa

Method
  1. In a bowl, combine the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to create a marinade.
  2. Add the lamb cubes to the marinade and toss until evenly coated. Let it marinate for at least 30 minutes or up to overnight in the fridge.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes, zucchini slices, capsicum chunks, and red onion chunks onto skewers, alternating the ingredients.
  5. Lightly coat the grill or grill pan with cooking spray to prevent sticking.
  6. Place the skewers on the grill or grill pan and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and the vegetables are tender.
  7. Remove the skewers from the grill and let them rest for a few minutes.
  8. Serve the lamb and vegetable skewers with a side of cooked quinoa.
