Ingredients
- 225g lamb, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 zucchini, sliced
- 1 capsicum, cut into chunks
- 1 red onion, cut into chunks
- Cooking spray
- 1 cup cooked quinoa
Method
- In a bowl, combine the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to create a marinade.
- Add the lamb cubes to the marinade and toss until evenly coated. Let it marinate for at least 30 minutes or up to overnight in the fridge.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated lamb cubes, zucchini slices, capsicum chunks, and red onion chunks onto skewers, alternating the ingredients.
- Lightly coat the grill or grill pan with cooking spray to prevent sticking.
- Place the skewers on the grill or grill pan and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and the vegetables are tender.
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve the lamb and vegetable skewers with a side of cooked quinoa.
