Thai Beef Salad

This fresh + delicious Thai Beef Salad is our idea of the perfect meal. 

Serves 4

Ingredients 
 
  • 500g beef sirloin, thinly sliced
  • 1 tbsp vegetable oil
  • 4 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 red capsicum, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup roasted peanuts, crushed


For the dressing 
  • 3 tbsp lime juice
  • 2 tbsp fish sauce (or soy sauce for a 
  • vegetarian option)
  • 1 tbsp brown sugar (or a sweetener of choice)
  • 1 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1 small red chilli, thinly sliced (optional for spice)


Method
  1. Heat the vegetable oil in a skillet over medium-high heat. Add the beef slices and cook for about 2-3 minutes per side, or until cooked to your desired level of doneness. 
  2. Remove the beef from the skillet and let it rest for a few minutes.
  3. In a large bowl, combine the salad greens, cucumber, capsicum, red onion, cilantro, and mint leaves.
  4. Slice the cooked beef into thin strips and add them to the bowl.
  5. In a separate small bowl, whisk together the lime juice, fish sauce (or soy sauce), brown sugar, vegetable oil, minced garlic, and red chilli (if using).
  6. Pour the dressing over the salad and toss to combine, ensuring all ingredients are coated.
  7. Sprinkle the crushed peanuts over the top as a garnish.
