This fresh + delicious Thai Beef Salad is our idea of the perfect meal.
Serves 4
Ingredients
- 500g beef sirloin, thinly sliced
- 1 tbsp vegetable oil
- 4 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 red capsicum, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup roasted peanuts, crushed
For the dressing
- 3 tbsp lime juice
- 2 tbsp fish sauce (or soy sauce for a
- vegetarian option)
- 1 tbsp brown sugar (or a sweetener of choice)
- 1 tbsp vegetable oil
- 1 clove garlic, minced
- 1 small red chilli, thinly sliced (optional for spice)
Method
- Heat the vegetable oil in a skillet over medium-high heat. Add the beef slices and cook for about 2-3 minutes per side, or until cooked to your desired level of doneness.
- Remove the beef from the skillet and let it rest for a few minutes.
- In a large bowl, combine the salad greens, cucumber, capsicum, red onion, cilantro, and mint leaves.
- Slice the cooked beef into thin strips and add them to the bowl.
- In a separate small bowl, whisk together the lime juice, fish sauce (or soy sauce), brown sugar, vegetable oil, minced garlic, and red chilli (if using).
- Pour the dressing over the salad and toss to combine, ensuring all ingredients are coated.
- Sprinkle the crushed peanuts over the top as a garnish.
