These Sweet Potato + Chickpea Burgers are a show-stopper.

Ingredients
- 2 cups mashed sweet potatoes
- (about 2 medium-sized sweet potatoes)
- 400g chickpeas, drained and rinsed
- 1 cup bread crumbs
- 1/2 cup finely chopped red onion
- 4 cloves garlic, minced
- 1/2 cup chopped fresh cilantro or parsley
- 2 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 tbsp olive oil (for cooking)
- 4 burger buns

- Sliced tomatoes
- Sliced onions
Method
- In a large bowl, combine the mashed sweet potatoes, chickpeas, bread crumbs, red onion, garlic, cilantro or parsley, ground cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Divide the mixture into 4 equal portions. Shape each portion into a patty, making sure they are tightly packed.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until they are browned and heated through.
- While the patties are cooking, prepare the burger buns by toasting them if desired.
- Once the patties are cooked, remove them from the skillet and set aside.
- Assemble the burgers by placing a patty on the bottom half of each bun. Top the patty with lettuce leaves, sliced tomatoes, sliced onions, and pickles.
- Spread your preferred condiments on the top half of the bun and place the top bun on the assembled burger.
