Ingredients
- 2 skinless, boneless chicken breasts, sliced into thin strips
- 1 tbsp olive oil
- 1 red capsicum, sliced
- 1 green capsicum, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp chilli powder
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Juice of 1 lime
- Salt and pepper to taste
- 4 small wheat tortillas
- Optional toppings: salsa, guacamole,
- Greek yogurt, cilantro, lime wedges
Method
- Heat olive oil in a large pan over medium-high heat.
- Add sliced chicken to the pan and cook for 4-5 minutes until browned and cooked through.
- Remove the chicken from the pan and set aside.
- In the same pan, add the sliced capsicums, onion, and minced garlic.
- Cook for about 5 minutes until the vegetables are tender-crisp.
- Add the chilli powder, ground cumin, smoked paprika, and cayenne pepper to the pan. Stir well to coat the vegetables with the spices.
- Return cooked chicken to the pan and stir everything together. Cook for 2 minutes.
- Squeeze the lime juice over the chicken and vegetables. Season with salt and pepper to taste. Stir well to combine.
- Warm the tortillas in a microwave or lightly toast in a dry skillet.
- Divide the chicken and vegetable mixture among the tortillas, spooning it into the centre.
- Fold the tortillas over the filling to form fajitas.
- Serve the chicken fajitas with your choice of toppings.
