Teriyaki Salmon, Steamed Broccoli and Brown Rice

Serves 1

Ingredients
  • 150g salmon fillet
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
  • 1 cup steamed broccoli florets
  • 1/2 cup cooked brown rice
Method
  1. Preheat the oven to 200°C.
  2. In a small bowl, whisk together the soy 
  3. sauce, honey (or maple syrup), minced garlic, grated ginger, sesame oil, salt, and pepper to make the teriyaki sauce.
  4. Place the salmon fillet in a baking dish lined with parchment paper or aluminium foil.
  5. Pour the teriyaki sauce over the salmon, making sure to coat it evenly.
  6. Bake the salmon in the preheated oven for about 12-15 minutes, or until it is cooked through and flakes easily.
  7. While the salmon is baking, steam the broccoli until it is tender-crisp.
  8. Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  9. Serve the baked teriyaki salmon with steamed broccoli and brown rice.
